Diabetes — An epidemic preventable by changing your diet

The Cause

T2D is intracellular fat (lipotoxicity) jamming the insulin receptors in muscle and liver. Saturated fat from animal foods and refined oils feed this. Whole plants — high in fiber, low in saturated fat, rich in resistant starch — do the opposite: empty out muscle cell fat, restore insulin sensitivity.

  • Cut refined sugar and white flour; favor whole grains.
  • Eat a cup of legumes daily — slow-release carbs.
  • Minimize saturated fat (butter, cheese, fatty meats).
  • Walk after meals — drops post-meal glucose ~30%.
