T2D is intracellular fat (lipotoxicity) jamming the insulin receptors in muscle and liver. Saturated fat from animal foods and refined oils feed this. Whole plants — high in fiber, low in saturated fat, rich in resistant starch — do the opposite: empty out muscle cell fat, restore insulin sensitivity.
